The book Gap Creek Essay The main objective of the book Gap Creek is to educate people about the trials and challenges of marriage. The speaker of the book, Julie Harmon tells about her story as a teenager and continues till the time she met Hank and married him. Till then, the story focuses more on their lives as a couple. The story is narrated from the perspective of the main character Julie. It started on her life as a teenager. At an early age she started to help in chores and in some of his father’s work. She lives with her father, mother Delia, baby brother Meseiner, young sister Rosie and baby sister Carolyn. Meseiner, being the only boy, was spoiled by her parents. However, it was not long when he passed away following her father being sick. Since then her mother was not able to do the things she used to and it was up to her and her sister Rosie to do the house works since her sister Carolyn is now the one being spoiled by her mom. She works hard like a man since she knows that if does not take charge and do her father’s work, nobody would get it done. Unfortunately, her father didn’t make it and passed away too. Her family was having a hard time adjusting to her father’s death but later on found a way to still keep the family intact. One day when Julie and her mother were working on a field, a man came by asking for directions. Hank Richards, who came from downtown, went to look for the Willards on the mountains since they are selling sweet taters. Later on, he and Julie took a special interest on each other, and after spending time with each other twice, Hank asked Julie to marry him. Julie agreed, not bothered by her age and current life situation. Her mother did not approve of this for she thinks that Julie is not ready for a married life. Nevertheless, her mother failed on convincing her to back out of the marriage. After Julie and Hank got married, they move to Gap Creek and her sister Rosie took over on the family obligations. The bad news is that the new couple didn’t have a place to live, so they agreed to live with Mr. Pendergast who allowed them to live with him in exchange for household services. Hank works all day and Julie does the chores. When Hank’s mother came to visit, Julie accidently caught fire while preparing dinner for Hank’s mother. When all of them were safe outside the house, Mr. Pendergast rushed inside to get is pension money. Sorry to say, Mr. Pedergast didn’t make it for the fire was to big. When the fire was cleared, they were able to retrieve Mr. Pendergast’s body, burned and lifeless. Julie and Hank, uncertain of their future, with a baby on the way didn’t know how long they could stay in the house before the heirs take it. Hank Richards, though a supporting character, is the one being talked about in this paper. Some of his actions showed defense mechanisms studied by Freud. When he was in the field asking directions from Julie’s mother, he showed displacement for he used Julie’s mother in order to get close to Julie. Displacement is defined as the redirection of an impulse to a substitute target. Another example was when Hank and Julie for fighting on Christmas. Hank who’s originally angry at Julie for constantly asking nonsense question, instead directed his anger to the flood and the storm leaving an angry and sarcastic response to Julie – â€Å"If the creek rises we won’t be able to get out of the house without a boat† – when asked what to do if the flood rises. He also showed projection when he was talking to Julie’s mother like an old man. He also illustrated this when they were in the forest and said that there are a lot of varmints in there, in which he referred the varmints to the Willards. When we say projection, we tend to deny our thoughts and feelings by attributing them to somebody else. Hank however showed isolation a lot of times. First was when he was a Julie’s house for dinner and she invited Julie to go to the spring for he said that drinking cold water is good after hot dinner, isolating the fact that Julie spilled coffee in his pants. It is possible for someone to portray to characters at once. In this case, Hank also showed reaction formation for he â€Å"believed the opposite†, meaning even after Julie spilled hot coffee on his new bought pants, he came to love her more. He also showed reaction formation when during a storm, he said that they never had floods on Christmas even if he knows that that happens because they live on a mountain before. To make it more clear, isolation is defined as stripping or isolating the emotions from a difficult memory or threatening impulse. Reaction formation, as mentioned earlier, â€Å"believing on the opposite†. Most of Hank’s attitude shows intellectualization or rationalization. Some of these were when Hank was asked by Julie about banjos. Hank, having a bad memory with his father when talk about banjos becomes rather more focused on the idea on how the banjo was made out of the skin of a cat. When he and Julie went to the spring to drink, instead of commenting on how refreshing the water was he prefers to compare the idea the water’s taste from rubies and emeralds. When Julie talks about his father using wine for rheumatism, Hank engaged on the conversation that pokeberry is better for its therapeutic on the joints and explains how the wine can warm and soothe the joint. Intellectualization is defined as analyzing instead of feeling and reacting, which Hank showed most of the time when he answers intelligent but unrelated answer. On the situation when Julie asked Hank to sing a Christmas carol, Hank answered him that he can’t remember how to sing depicts denial and at the same time, repression. He was in denial that he can’t sing and at the same unconsciously repressing the idea that he can sing for he is more focused on the flood at that time. Denial is defined as falsifying reality which is somewhat close to repression. Repression however, means not being able to remember things. Gap Creek was truly wonderful and a lot of values can be learned. The trials and challenges that Julie and Hank overcome were really admirable for with each obstacle that would come to them, both of them always want to manage to put their lives back again. Task Centred Approach And The Crisis Intervention Social Work Essay This short study takes up the evaluation and assessment of two social work intervention theories, namely the Task Centred Approach and the Crisis Intervention Method, with special regard to their implications and applications for social work practice. Social workers, in the course of their practice, are often called upon to help people in coping and dealing with different types of difficulties in their lives. Human beings face situations of crisis at one time or the other during their lives (Roberts, 2000, p 11). The crisis theory postulates that the occurrence of crises is normal to life. Such crisis situations can occur suddenly, like family illnesses or a loss of jobs, or be unpredictable, like entering school or growing older (Roberts, 2000, p 11). Individuals attempt to cope with crises with their available mechanisms, but face problems when such mechanisms do not work or when earlier unresolved crises get reactivated. Social workers are often called upon to intervene with individuals and help them in coping with their crises (Roberts, 2000, p 11). The task-centred approach is a progressive and goal-orientated method for social work practice. It constitutes a practice-based approach that is built on research and is being used in a diverse settings and circumstances (Nash, et al, 2005, p 33).  It represents a social work method wherein clients are assisted in carrying out problem reducing tasks within specific time periods. It is structured, problem focused and time-restricted and is being increasingly used in contemporary social service interventions (Nash, et al, 2005, p 33). Crisis intervention is often grouped together with the task centred approach. Malcolm Payne (1991, p 4) sees significant common ground between crises intervention and task centred approaches to social work practice. Both methods focus on problem solving, deal with brief interventions and are related to learning theory. This essay takes up the examination and assessment of these two theories, with especial regard to their communalities, their differences and their relevance for social work practice. Due regard is given to the implications of anti-oppressive practice. 2. Crisis Intervention Theory The crisis theory states that it is important for people to resolve their crises situations and experiences in order to cope with new developments and crises (Aguilera, 1998, p 47). If individuals are unable to resolve their earlier crises, they become more vulnerable to inability to resolve new crises. Individuals who learn new skills to resolve their crises are on the other hand strengthened in coping with future crisis situations (Aguilera, 1998, p 47). Human beings have considerable capacities for handling or dealing with difficult situations. It is only when such difficulties assume significant proportions and people do not have appropriate resources, personal, emotional, social, spiritual or physical, to deal appropriately with stressful circumstances or events that they become involved in crises. Difficult or stressful events do not by themselves result in crisis situations (Aguilera, 1998, p 47). Crises are actually determined by the responses of individuals to specific stres sful circumstances or events and their responses to them. Crises develop only when individuals perceive specific events to be significant and threatening, try to handle such events with their usual coping strategies without success, and are not able to use other alternatives (Aguilera, 1998, p 47). Behavioural and psychological experts perceive crises to be akin to states of psychological disequilibrium. Individuals experiencing crises are likely to experience a range of emotions like feelings of apprehension, anxiety, fear, guilt and helplessness (Nash, et al, 2005, p 37). Other indicators include alterations in eating and sleeping patterns, activity and energy levels and ability to concentrate. People in crises are also commonly known to suffer from depression and withdraw from social intervention (Nash, et al, 2005, p 37). Social work experts argue that whilst the majority of crises run their course or reach some semblance of stability within one or two months, it is necessary for skilled intervention to take place to strengthen the coping mechanisms of individuals. The failure to do so will result in the existence and continuance of crisis associated behaviours, even as the opportunity for change will be forgone (Nash, et al, 2005, p 37). People in crisis often have little by way of solutions and are receptive to external help and assistance (Roberts, 2000, p 19). The provisioning of skilled intervention by social work practitioners during the occurrence of the crises can result in opportunities for individuals experiencing crisis to learn new skills, achieve beneficial behavioural change, and regain stability. Individuals who have been able to successfully cope with crises are strengthened by such experiences and can use their skills in future times of difficulty (Roberts, 2000, p 19). Crisis intervention is essentially a professional response that is limited in terms of time and is used to assist individuals, families, and groups (Hepworth, et al, 2002, p 83). Social workers aim to assess the openness of individuals experiencing crises to learning of new skills and mechanisms for coping. They also help individuals in reducing their feelings of helplessness, isolation, and distress and use social resources to help in restoring individuals to their prior functional levels, as soon as practically possible (Hepworth, et al, 2002, p 83). Such social work intervention is done through listening, validation, acceptance, normalisation, reassurance, education, advocacy and brokering resources (Nash, et al, 2005, p 38). Crisis intervention can be specifically segregated into 7 stages, namely (a) establishment of communication and development of feelings with individuals that circumstances can become better, (b) assessment of situation, (c) exploration of available strengths and resources, (d) goal setting with the use of such strengths and resources, (e) implementation of plan, teaching of new skills and mobilisation of other support if required, (f) evaluation and adjustment of the plan and (g) follow up and termination of relationship (Hepworth, et al, 2002, p 83). It is important for social workers to be skilled in crisis intervention because of the constant demand upon them for helping people in crisis situations (Roberts, 2000, p 19). Social workers are liable to encounter clients with diverse needs, which may in turn require research, strategic planning and the providing of individualised person centred support (Roberts, 2000, p 19). The nature of crisis intervention work also calls for confidentiality and emotional separation in order to deliver services in a professional manner (Roberts, 2000, p 19). 3. Task Centred Approach The task centred approach emerged in response to the slow and inadequate results that were being achieved through traditional casework methods (Reid, 1997, p 134). Traditional casework methods in social work were felt to be of limited use because of their resource intensive nature, their lack of focus, and their ambiguous outcomes, which were difficult to assess and quantify (Reid, 1997, p 134). Reid and Shyne engaged in extensive study in the late 1960s to explore alternate approaches to casework and developed the task centred approach for social work practice, which called for limited but intensely focused intervention periods. The approach was essentially client oriented and required the social worker to act as a facilitator (Reid, 1997, p 134). With the task centred approach helping clients to improve their difficulties quickly, the process was soon adopted for replication and development in the United Kingdom (Reid, 1997, p 134). Studies on the task centred approach revealed that unfocused help, as was provided by the psycho-social approach and the case study method, over long periods, resulted in reduction of hope and self confidence on the part of the client (Nash, et al, 2005, p 42). It also resulted in negative dependency and unnecessary attachments to specific organisations or particular social workers (Nash, et al, 2005, p 42). It was also seen that the setting of time limits for achievement of specific outcomes helped in building expectations of the possibility of rapid change and enhanced participant energy and motivation (Nash, et al, 2005, p 42). Whilst the task centred approach proved to be practically beneficial for clients and also served, reduce and optimise utilisation of limited social work resources, it also facilitated a shift towards the person centred approach, the negation of the assumption of the professional being the only source of expertise, and helped in achievement of greater empowerment and reduction of oppression (Naleppa Reid, 1998, p 63). The task centred approach calls for attention to be paid to social and external issues that affect individuals rather than on perceiving individuals and their psychological histories to be the main cause of their difficulties (Naleppa Reid, 1998, p 63). The task centred approach involves a structured method wherein the social worker firstly assists the service user in articulating the problems in the ways perceived by service users (Hepworth, et al, 2002, p 87). The social workers subsequently helps the service user to detail and breakdown the problems, taking care to redefine them wherever necessary and helping the service user to locate important areas for action (Hepworth, et al, 2002, p 87). The social worker finally motivates the service user to categorise and prioritise his or her individual problem in line with his or her perceptions (Naleppa Reid, 1998, p 63). The social worker and service user thereafter work in partnership to (a) specify and identify outcomes, (b) agree to contracts and (c) review and assess progress. Social workers who use the task centred approach should be able to positively engage service users and instil trust and confidence (Hepworth, et al, 2002, p 87). Commonalities in Task Centred and Crisis Intervention Approaches Task centred approaches and crisis intervention methods appear to merge well in both theory and practice (Watson, et al, 2002, p 96). Social work research indicates that the use of these methods have proved to be effective with a wide range of clients. Both theories emerged in response to the apparently ineffective outcomes of case work approaches that were grounded in psychodynamic theory (Watson, et al, 2002, p 96). Both methods additionally focus on brief and short term interventions. They are connected to learning theory and based upon problem solving ideas (Watson, et al, 2002, p 96). Both these approaches call upon social workers to engage in participative and joint activity with service users, first to assess and analyse problems and their causes and then take action to deal with such problems (Sandoval, 2002, p 63). The application of these methods thus calls for the use of the person centred theory, the need to place the service user at the centre of the issue and the urgency of viewing the issue from his or her perspective (Sandoval, 2002, p 63). Social workers need to be very good listeners in order to be able to locate the real issues that are troubling service users and thereafter be able to help them with measures to tackle their difficulties (Sandoval, 2002, p 63). Like other social work methods, the task centred approach does have its limitations. It is in the first instance predicated upon the rationality of service users and their willingness to work with social workers (Nash, et al, 2005, p 53). It is also difficult to apply it without appropriate agency support. Despite such limitations the two approaches continue to be very useful, especially because of their instrumentality in increasing empowerment and their integral anti-oppressive approach (Nash, et al, 2005, p 53). The methods increase the abilities of service users through the inculcation of new skills and allow them to deal, not just with their current situations but with future circumstances of difficulty and oppression (Nash, et al, 2005, p 53). Conclusions Social work practice is influenced by many factors that require the taking account of the perspectives of service users, social workers, agencies and society. The approach of individual workers is bound to be influenced by numerous factors that can leave them confused and looking for guidance in their task of assisting service users in difficulties. The task centred approach and the crisis intervention theory provide useful tools to service users to assess the true conditions of service users, participate with them in structured, time bound and joint resolution of problems and empower them to face and overcome oppression. Social workers do however need to understand the implications of these theories and refrain from labeling their actions in all difficult situations to be task centred or critical intervention in nature. The true understanding of the potential and use of these theories will help them significantly in their practice scenarios.

It’s inevitable that these tissues need a large amount of energy to maintain health and to stay productive. When the body encounters a famine, it reacts to the lack of food by many different starvation endorse tactics. The role of an Occupational Therapy Assistant is to help people participate in the things they want and need to do through a therapeutic use of activities. The function of the OTA is not limited to other duties such as preparing materials and equipment, collaborate with health professionals, evaluate progress and maintain records, and clerical duties. The OTA works closely with the Occupational Therapist to assist in the development of treatment plans, carry out routine functions, and direct activities. Occupational therapy is useful in many areas of functional life.Helping children in their school environment is one example. A program can be designed to enhance a student’s ability to access and be successful in the learning environment. Curriculum may include tuning fine motor skills, handwriting skills, organizational techniques, and classroom modification in conjunction with the teacher to ensure successful participation. Another area suited for occupational therapy would b e assisting the elderly. The OTA may assist with everyday functions such as dressing and grooming. Focus is to adapt the environment to fit the patient.This can increase the chances of remaining in the home. Adults with limited vision can maintain their independence and complete daily activities with the help of the OT and OTA. Daily tasks can include showering, dressing, cooking, shopping, managing finances, and mobility. As an Occupational Therapy Assistant, I believe I can care for others personally, medically, and emotionally. I will be a productive and effective part of the dynamics between the OT, myself as the OTA, and the patient to achieve the quality of life that is my responsibility to provide.I communicate clearly, have compassion and reasoning, and thrive to become a rehabilitation leader. I can perform independently under instruction, possess organizational skills, and have sense of priority. Being part of the academic system for the past three years has conditioned me to balance life and college responsibilities. My anticipation of entering into a medical health program, such as Occupational Therapy, has allowed me to make adjustments and preparations in my life.I feel that this is an appropriate time in my life to devote myself and become the medical professional I have always wanted to be. I chose to enter this profession because I feel that I can be a productive member of a team and provide physical rehabilitation to others in need. I have the capability to perform all the duties required of the OTA. My goal is to successfully complete the program and become an important part of someone’s life. Further education is a long term goal and am looking forward to starting this new chapter in my life.

Of Mice and Men by John Steinbeck Essay

Every piece of literature created is influenced by the time in which it was written. A particular text is a reflection of the era or period in which it was born. An author is contained within a specific time in history, and his writing becomes the result of the social, economic or political milieu of that time. This is the reason why it is extremely important for a reader to determine the context of the story in order to fully understand a piece of literature. Of Mice and Men by John Steinbeck is a great example of how a text reflects a particular era. It is a novel written in the 1930s and revealed what was happening during that time in California. Hence, John Steinbeck’s Of Mice and Men is a reflection of California during the 1930s. Of Mice and Men is a story about the friendship between George Milton and Lennie Small. The two men are remarkably different from each other. Steinbeck (1994) described George as â€Å"small and quick, dark of face, with restless eyes and sharp, strong features† (p. 4). He depicted Lennie as the opposite of his companion; he was â€Å"a huge man, shapeless of face, with large, pale eyes, with wide sloping shoulders† (Steinbeck, 1994, p. 4). However, their differences were not limited to physical appearances. George is intelligent, but his friend Lennie is mentally challenged (Steinbeck, 1994). The mental condition of the latter forced him to depend solely on the former. While George often expressed displeasure about the burden of being Lennie’s companion, he proved to be a dedicated friend. He served as Lennie’s guardian. Unfortunately, Lennie’s disability caused him to be involved in great trouble. He was unable to discern his own strength, accidentally harming and killing others in the process. In the end, George continues to fulfill his role as Lennie’s protector; he killed Lennie himself to spare him from death in the hands of Curley (Steinbeck, 1994). While the friendship between George and Lenny is the main focus of the story, the history of California plays a bigger and more significant role in the novel. Of Mice and Men is also a story about California and the problems which plagued it during the 1930s. John Steinbeck wrote three books which delved into the situation in California in 1930s; Of Mice and Men is the second book in the trilogy. The other two novels were In Dubious Battle and The Grapes of Wrath. In On Mice and Men, the relationship between George and Lennie is set against the backdrop of 1930s California. Both men are migrant workers with a single dream: they wanted to own a piece of land and farm it themselves. George said, â€Å"Someday—we’re gonna get the jack together and we’re gonna have a little house and a couple of acres an’ a cow and some pigs† (Steinbeck, 1994). This dream was influenced, if not completely defined, by the problems of the state at that particular time. In the Introduction of the On Mice and Men, Shillinglaw (1994) described California in the 1930s. During the 1930s, the main problem in California was agricultural labor. Since the 1900s, most of the agriculturally abundant valleys were located in California. Produce such as broccoli, lettuce, sugar beets and strawberries were only some of those harvested in plenitude. The vast farms in California required many laborers for its harvest. Meanwhile, the Southwest region of America suffered from drought. Due to the drought, the once bountiful lands became similar to deserts. As a result, laborers left what was known as the Dust Bowl to try their luck in California. Since 1935, an estimated 350,000 people from Arkansas, Oklahoma and Texas stormed the Golden State in hopes of finding jobs in the farms. While it was true that California had enormous agricultural fields which supplied most of the country’s produce, the employment of workers were still a problem. There were too many people to accommodate for jobs in these farms. Workers from the Dust Bowl wandered throughout the state in search of crops to farm, as they were desperate for work. By 1936, California was faced with a major problem: the constant flow of poor and hungry migrants from the Southwest. The situation of wandering farm workers was illustrated in Of Mice and Men. The novel began with the arrival of George and Lennie in the Salinas River. George was upset that the bus driver did not drop them off at the proper location. He said, â€Å"Didn’t wanta stop at the ranch gate, that’s what† (Steinbeck, 1994, p. 6). The two men exemplified the situation of all the other migrant workers in California during the 1930s. Agricultural laborers such as George and Lennie were directed from one ranch to another, in search for work. George asked Lennie, â€Å"You remember about us goin’ into Murray and Ready’s, and they give us work cards and bus tickets? † (Steinbeck, 1994, p. 7). Murray and Ready had provided both men with the cards and tickets, then sent them to the next ranch. According to the novel, the last ranch they worked for was called Weed. The plight of the itinerant laborers was best expressed by George’s words: â€Å"They come to a ranch an’ work up a stake and then they go inta town and blow their stake, and the first thing you know they’re poundin’ their tail on some other ranch† (Steinbeck, 1994, p. 15). The novel also portrayed the difficult life of male migrant workers and their need for human company. It was said that majority of the migrant agricultural workers in California were single men. Since the 1870s until 1930, the fruit and wheat crops of the Golden State were harvested by single men. These men were modern day nomads, for they constantly moved from one place to another. They carried bindles whenever they went. George confirmed the situation of male farm workers in California: â€Å"Guys like us, that work on ranches, are the loneliest guys in the world. They got no family. They don’t belong no place† (Steinbeck, 1994, p. 15). The solitude of the farm workers resulted in the constant need for companionship. In the absence of wives and families, the male itinerant laborers develop friendships instead. The friendship between George and Lennie was the kind of relationship created due to the circumstances of the migrant workers. Despite his complaints about having Lennie around, it was apparent that George was just as dependent on Lennie as Lennie was dependent on him. Whenever Lennie threatened to leave, George told him that he wanted his friend to stay. Their bond was so strong that they did not consider themselves as similar to the aforementioned lonely guys. George said: â€Å"With us it ain’t like that. We got a future. We got somebody to talk to that gives a damn about us† (Steinbeck, 1994, p. 15). The novel revealed how agricultural laborers were marginalized in California society. All of them were misplaced and lived on dire conditions. Despite the unfortunate circumstances which befell them, there are those who remained optimistic and ambitious. However, even the ambitious laborers also fail. They would simply leave the ranch and proceed to another place. In the novel, George and Lennie went to the bunk house of the next ranch they were supposed to work for. When George asked Candy why the former occupant of his new bed quit, this was the response: â€Å"He†¦just quit, the way a guy will. Says it was the food. Just wanted to move† (Steinbeck, 1994, p. 20). George and Lennie were also ambitious. They have grown weary of working from one ranch to another, and working for people like Curley. They dreamt of having a piece of land they can personally attend to. The dream was revealed early on in the novel, and was continuously mentioned throughout the story. Candy overheard the two taking about their desire for their own (Steinbeck, 1994). He responded positively, and even offered his savings to both men so that he could also live on their land. Crooks also learned about the plan to buy land. During one night, Lennie spoke to Crooks about his plan to own land with George. Unlike Candy, Crooks had a different response to the plan. He discouraged Lennie by insinuating that his dream will never come true. Crooks said: â€Å"I seen hundreds of men come by on the road an’ on the ranches, with their bindles on their back an’ that same damn thing in their heads†¦every damn one of ‘em’s got a little piece of land in his head. An’ never a God damn one of ‘em ever gets it† (Steinbeck, 1994, p. 75). The character of Crooks was right; in 1930s California, many workers did not achieve the success they originally hoped to find there. By the end of the novel, George and Lennie proved to be unsuccessful as well. The dream of George and Lennie to obtain their own land did not come true. Lennie has a fondness for petting things which are soft; it was this fondness which guaranteed his demise (Steinbeck, 1994). Lennie and George were forced to leave the ranch in Weed because Lennie’s petting had gotten them in trouble. In the ranch in Soledad, Lennie accidentally killed a puppy because he was too strong. By accident, he pulled the hair of Curley’s wife and also broke her neck, causing her to die. When Curley and the rest of the men in the ranch found out that Lennie killed the wife, they form a mob and went to search for Lennie. Before they arrived at the ranch, George told Lennie to return to the Salinas River in case he got in trouble. George told his friend, â€Å"Lennie—if you jus’ happen to get in trouble like you always done before, I want you to come right here an’ hide in the brush† (Steinbeck, 1994, p. 17). After he killed Curley’s wife, Lennie proceed to the brush and George met him there. George began to speak of the land they would own together and the rabbits that Lennie would take care of. Afterwards, he shot Lennie on the back of his head (Steinbeck, 1994). The farm was a representation of every migrant worker’s dream: to own a piece of land and be in control of their own lives. The farm served as a symbol of freedom and independence. For George, the death of his friend was also the end of their dream. Of Mice and Men by John Steinbeck was truly a representation of California during the 1930s. Through the story of George, Lennie and the other characters, Steinbeck was able to illustrate the agricultural labor problem that existed in the Golden State during that decade. The novel revealed the displacement of workers, the harsh realities of living as a nomad in California, their isolation and need for companionship and the broken dreams that come with the journey. Animal Nutrition: Distinguish Macronutrients and Micronutrients Essay

There are seven major classes of nutrients: carbohydrates, fats, fiber, minerals, protein, vitamin, and water. These nutrient classes can be categorized as either macronutrients (needed in relatively large amounts) or micronutrients (needed in smaller quantities). The macronutrients are carbohydrates, fats, fiber, proteins, and water. The micronutrients are minerals and vitamins. The macronutrients (excluding fiber and water) provide structural material (amino acids from which proteins are built, and lipids from which cell membranes and some signaling molecules are built) and energy. Some of the structural material can be used to generate energy internally, and in either case it is measured in joules or calories (sometimes called â€Å"kilocalories† and on other rare occasions written with a capital C to distinguish them from little ‘c’ calories). Carbohydrates and proteins provide 17 kJ approximately (4 kcal) of energy per gram, while fats provide 37 kJ (9 kcal) per gram.,[1] though the net energy from either depends on such factors as absorption and digestive effort, which vary substantially from instance to instance. Vitamins, minerals, fiber, and water do not provide energy, but are required for other reasons. A third class dietary material, fiber (i.e., non-digestible material such as cellulose), seems also to be required, for both mechanical and biochemical reasons, though the exact reasons remain unclear. Molecules of carbohydrates and fats consist of carbon, hydrogen, and oxygen atoms. Carbohydrates range from simple monosaccharides (glucose, fructose, galactose) to complex polysaccharides (starch). Fats are triglycerides, made of assorted fatty acid monomers bound to glycerolbackbone. Some fatty acids, but not all, are essential in the diet: they cannot be synthesized in the body. Protein molecules contain nitrogen atoms in addition to carbon, oxygen, and hydrogen. The fundamental components of protein are nitrogen-containing amino acids, some of which areessential in the sense that humans cannot make them internally. Some of the amino acids are convertible (with the expenditure of energy) to glucose and can be used for energy production just as ordinary glucose. By breaking down existing protein, some glucose can be produced internally; the remaining amino acids are discarded, primarily as urea in urine. This occurs normally only during prolonged starvation. They constitute a large part of foods such as rice, noodles, bread, and other grain-based products. Monosaccharides contain one sugar unit, disaccharides two, and polysaccharides three or more. Polysaccharides are often referred to as complex carbohydrates because they are typically long multiple branched chains of sugar units. The difference is that complex carbohydrates take longer to digest and absorb since their sugar units must be separated from the chain before absorption. The spike in blood glucose levels after ingestion of simple sugars is thought to be related to some of the heart and vascular diseases which have become more frequent in recent times. Simple sugars form a greater part of modern diets than formerly, perhaps leading to more cardiovascular disease. The degree of causation is still not clear, however. Fat A molecule of dietary fat typically consists of several fatty acids (containing long chains of carbon and hydrogen atoms), bonded to a glycerol. They are typically found as triglycerides (three fatty acids attached to one glycerol backbone). Fats may be classified as saturated or unsaturateddepending on the detailed structure of the fatty acids involved. Saturated fats have all of the carbon atoms in their fatty acid chains bonded to hydrogen atoms, whereas unsaturated fats have some of these carbon atoms double-bonded, so their molecules have relatively fewer hydrogen atoms than a saturated fatty acid of the same length. Unsaturated fats may be further classified as monounsaturated (one double-bond) or polyunsaturated (many double-bonds). Furthermore, depending on the location of the double-bond in the fatty acid chain, unsaturated fatty acids are classified as omega-3 or omega-6 fatty acids. Trans fats are a type of unsaturated fat with trans-isomer bonds; these are rare in nature and in foods from natural sources; they are typically created in an industrial process called (partial) hydrogenation. Many studies have shown that unsaturated fats, particularly monounsaturated fats, are best in the human diet. Saturated fats, typically from animal sources, are next, while trans fats are to be avoided. Saturated and some trans fats are typically solid at room temperature (such as butter orlard), while unsaturated fats are typically liquids (such as olive oil or flaxseed oil). Trans fats are very rare in nature, but have properties useful in the food processing industry, such as rancid resistance.[citation needed] Essential fatty acids Most fatty acids are non-essential, meaning the body can produce them as needed, generally from other fatty acids and always by expending energy to do so. However, in humans at least two fatty acids are essential and must be included in the diet. An appropriate balance of essential fatty acids -— omega-3 and omega-6 fatty acids -— seems also important for health, though definitive experimental demonstration has been elusive. Both of these â€Å"omega† long-chain polyunsaturated fatty acids are substrates for a class of eicosanoids known as prostaglandins, which have roles throughout the human body. They are hormones, in some respects. The omega-3 eicosapentaenoic acid (EPA), which can be made in the human body from the omega-3 essential fatty acid alpha-linolenic acid (LNA), or taken in through marine food sources, serves as a building block for series 3 prostaglandins (e.g. weakly inflammatory PGE3). The omega-6 dihomo-gamma-linolenic acid (DGLA) serves as a building block for series 1 prostaglandins (e.g. anti-inflammatory PGE1), whereas arachidonic acid (AA) serves as a building block for series 2 prostaglandins (e.g. pro-inflammatory PGE 2). Both DGLA and AA can be made from the omega-6 linoleic acid (LA) in the human body, or can be taken in directly through food. An appropriately balanced intake of omega-3 and omega-6 partly determines the relative production of different prostaglandins: one reason a balance between omega-3 and omega-6 is believed important for cardiovascular health. In industrialized societies, people typically consume large amounts of processed vegetable oils, which have reduced amounts of the essential fatty acids along with too much of omega-6 fatty acids relative to omega-3 fatty acids. The conversion rate of omega-6 DGLA to AA largely determines the production of the prostaglandins PGE1 and PGE2. Omega-3 EPA prevents AA from being released from membran es, thereby skewing prostaglandin balance away from pro-inflammatory PGE2 (made from AA) toward anti-inflammatory PGE1 (made from DGLA). Moreover, the conversion (desaturation) of DGLA to AA is controlled by the enzyme delta-5-desaturase, which in turn is controlled by hormones such as insulin (up-regulation) and glucagon (down-regulation). The amount and type of carbohydrates consumed, along with some types of amino acid, can influence processes involving insulin, glucagon, and other hormones; therefore the ratio of omega-3 versus omega-6 has wide effects on general health, and specific effects on immune function and inflammation, and mitosis (i.e. cell division). Good sources of essential fatty acids include most vegetables, nuts, seeds, and marine oils,[2] Some of the best sources are fish, flax seed oils, soy beans, pumpkin seeds, sunflower seeds, and walnuts. Fiber Dietary fiber is a carbohydrate (or a polysaccharide) that is incompletely absorbed in humans and in some animals. Like all carbohydrates, when it is metabolized it can produce four calories (kilocalories) of energy per gram. But in most circumstances it accounts for less than that because of its limited absorption and digestibility. Dietary fiber consists mainly of cellulose, a large carbohydrate polymer that is indigestible because humans do not have the required enzymes to disassemble it. There are two subcategories: soluble and insoluble fiber. Whole grains, fruits (especiallyplums, prunes, and figs), and vegetables are good sources of dietary fiber. Fiber is important to digestive health and is thought to reduce the risk of colon cancer.[citation needed] For mechanical reasons it can help in alleviating both constipation and diarrhea. Fiber provides bulk to the intestinal contents, and insoluble fiber especially stimulates peristalsis — the rhythmic muscular contractions of the intestines which move digesta along the digestive tract. Some soluble fibers produce a solution of high viscosity; this is essentially a gel, which slows the movement of food through the intestines. Additionally, fiber, perhaps especially that from whole grains, may help lessen insulin spikes and reduce the risk of type 2 diabetes. Protein Proteins are the basis of many animal body structures (e.g. muscles, skin, and hair). They also form the enyzmes which control chemical reactions throughout the body. Each molecule is composed of amino acids which are characterized by inclusion of nitrogen and sometimes sulphur (these components are responsible for the distinctive smell of burning protein, such as the keratin in hair). The body requires amino acids to produce new proteins (protein retention) and to replace damaged proteins (maintenance). As there is no protein or amino acid storage provision, amino acids must be present in the diet. Excess amino acids are discarded, typically in the urine. For all animals, some amino acids are essential (an animal cannot produce them internally) and some are non-essential (the animal can produce them from other nitrogen-containing compounds). About twenty amino acids are found in the human body, and about ten of these are essential, and therefore must be included in the diet. A diet that contains adequate amounts of amino acids (especially those that are essential) is particularly important in some situations: during early development and maturation, pregnancy, lactation, or injury (a burn, for instance). A complete protein source contains all the essential amino acids; an incomplete protein source lacks one or more of the essential amino acids. It is possible to combine two incomplete protein sources (e.g. rice and beans) to make a complete protein source, and characteristic combinations are the basis of distinct cultural cooking traditions. Sources of dietary protein include meats, tofu and other soy-products, eggs, grains, legumes, and dairy products such as milk and cheese. A few amino acids from protein can be converted into glucose and used for fuel through a process called gluconeogenesis; this is done in quantity only during starvation. The amino acids remaining after such conversion are discarded. Vitamins As with the minerals discussed above, some vitamins are recognized as essential nutrients, necessary in the diet for good health. (Vitamin D is the exception: it can alternatively be synthesized in the skin, in the presence of UVB radiation.) Certain vitamin-like compounds that are recommended in the diet, such as carnitine, are thought useful for survival and health, but these are not â€Å"essential† dietary nutrients because the human body has some capacity to produce them from other compounds. Moreover, thousands of different phytochemicals have recently been discovered in food (particularly in fresh vegetables), which may have desirable properties including antioxidant activity (see below); experimental demonstration has been suggestive but inconclusive. Other essential nutrients not classed as vitamins include essential amino acids (see above),choline, essential fatty acids (see above), and the minerals discussed in the preceding section. Vitamin deficiencies may result in disease conditions: goitre, scurvy, osteoporosis, impaired immune system, disorders of cell metabolism, certain forms of cancer, symptoms of premature aging, and poor psychological health (including eating disorders), among many others.[6] Excess of some vitamins is also dangerous to health (notably vitamin A), and for at least one vitamin, B6, toxicity begins at levels not far above the required amount. Deficiency or excess of minerals can also have serious health consequences. Water About 70% of the non-fat mass of the human body is made of water[7] . Retrieved from Journal of Applied To function properly, the body requires between one and seven liters of water per day to avoid dehydration; the precise amount depends on the level of activity, temperature, humidity, and other factors.[citation needed] With physical exertion and heat exposure, water loss increases and daily fluid needs will eventually increase as well. It is not fully clear how much water intake is needed by healthy people, although some experts assert that 8–10 glasses of water (approximately 2 liters) daily is the minimum to maintain proper hydration.[8] The notion that a person should consume eight glasses of water per day cannot be traced to a credible scientific source.[9] The effect of, greater or lesser, water intake on weight loss and on constipation is also still unclear.[10] The original water intake recommendation in 1945 by the Food and Nutrition Board of the National Research Council read: â€Å"An ordinary standard for diverse persons is 1 milliliter for each calorie of food. Most of this quantity is contained in prepared foods.†[11] The latest dietary reference intake report by theUnited States National Research Council recommended, generally, (including food sources): 2.7 liters of water total for women and 3.7 liters for men.[12] Specifically, pregnant and breastfeeding women need additional fluids to stay hydrated. According to the Institute of Medicine—who recommend that, on average, women consume 2.2 litres and men 3.0 litres—this is recommended to be 2.4 litres (approx. 9 cups) for pregnant women and 3 litres (approx. 12.5 cups) for breastfeeding women since an especially large amount of fluid is lost during nursing.[13] For those who have healthy kidneys, it is somewhat difficult to drink too much water,[citation needed] but (especially in warm humid weather and while exercising) it is dangerous to drink too little. People can drink far more water than necessary while exercising, however, putting them at risk of water intoxication, which can be fatal. In particular large amounts of de-ionized water are dangerous. Normally, about 20 percent of water intake comes in food, while the rest comes from drinking water and assorted beverages (caffeinated included). Water is excreted from the body in multiple forms; including urine and feces, sweating, and by water vapor in the exhaled breath.
